Get 2 or 3 fresh zucchini you can also add yellow squash for color
Thinly slice the zucchini and squash and set aside, (you can sprinkle lipton onion seasoning on it)
Take 3 or 4 shallots (if you don’t have any, green onion will do) slice the shallots and set aside
Slice a portion of bell pepper and a portion of yellow and or red pepper for color and seasoning
Take boneless skinless chicken breast and dice it up.  You can marinate it for taste with your favorite seasoning (I’ll leave that up to the individual, I use paprika, ground pepper, and a dash of seasoning salt), you can use a tad of pesto if you want that is really nice

Bring pasta on to boil (Whatever type you like rigatoni works well (I use a drop or two of olive oil and a pinch of salt in the water).  Takes about 12 minutes for whole grain pasta but test for desired tenderness,

In a skillet, lightly coated with olive oil (I also use a bit of nonstick Pam), over medium heat, add diced seasoned chicken, then add shallots, zucchini, pepper mix, stir fry until tender (I like my veggies with a little firmness to them), Chicken should be golden
You can fork up the pasta and spoon zucchini stir fry over pasta, sprinkle with Parmigiano-Reggiano  cheese and fresh ground pepper.  Serve hot with a nice crisp chilled white wine.  (I like German white wines)

Prep time about 15 minutes
Cook time about 15 minutes
Eat time:  Cheesy
